Spanish Rice, Only Not

What you need: 

2 thick slices of eggplant, shredded (it's ok if it's mushy)
1/4 cup onion, diced
1/4 cup green pepper, diced
1 to 2 oz tomato sauce
chili powder to taste
ground cumin to taste
salt if desired
diced jalapeno or red pepper if desired

What you do: 

Combine all ingredients in a small frying pan and cook on medium heat until most of the liquid is evaporated.
The result should be something like Spanish rice. I created this recipe because I didn't want to serve a starchy side with a starchy main dish. Enjoy!

SO HOW'D IT GO?

Wow, this was really yummy!  An unusual way to use eggplant.  I doubled this recipe and added about 4oz tomato paste, 1/4 cup water, 1 Tbs sugar, and 3 halves of red, yellow and green peppers. 

It really did have that Spanish rice flavor...yum...

Ironically, I served it over rice and it was spectacular.
