Spaghetti Squash Spaghetti
1 medium spaghetti squash
1 tablespoon olive oil
2 garlic cloves, minced
1/2 onion, chopped
3/4 cups mushrooms, sliced
1 (15 ounce) can Italian tomatoes
1/4 cup parsley
vegan parmesan cheese, to taste
1. Preheat oven to 400 degrees F. Cut the squash in 1/2 and prick holes into the skin. Scoop out the seeds. Fill a baking dish with about 1/4" water. Place the squash face up in the dish. Bake for 30-40 minutes, until tender.
2. In the meantime, saute the garlic and onion in the oil until onion is transparent. Add mushrooms, sauté for 2 more minutes. Add Italian tomatoes and parsley. Let simmer for 10-15 minutes.
3. When squash is tender, use fork to remove the strands from the skin. Place on plates and top with the sauce. Sprinkle with vegan parmesan cheese.

Which side do you define as the "face" side up? I'm going to take a guess and put the skin side up, since this would be the side you would see as a face on a jack-o-lantern. I hope my guess is right so I don't waste a perfectly good organic squash.
Thanks for this great idea... came out sooo nice! I'm a carb addict and I wanted to see if this would keep me satisfied like pasta would- I'm happily stuffed! My sauce was kinda different.. added 1/3 of a green pepper, 1/3 of a leftover leek, fresh ginger, cumin, cardamom, garlic & onion powder, black pepper and sea salt, and fresh basil I needed to use up. Didn't have onion.. will use next time.
I also just threw the squash halves in my toaster oven dry, face up, with a sprinkle of pepper, for about 25 minutes. It was still a bit crisp, kind of al dente, and I really enjoyed it. I was making it for myself but my mom came and stole most of it. :P It does smell great cooking. I'm gonna have to make this more often, thanks!
fantastic recipe. i also changed it up a little for my liking.
like i added a 1/2 of a green pepper and some celery in the saute and it really added a lot of flavor. :)

This was my first experience with spaghetti squash and I rather enjoyed that part....but I wasn't a huge fan of the sauce....even after adding a bunch of red pepper flakes, parmesan, and more garlic, it still was kinda bland for my tastes....but I'm kind of addicted to store bought sauces...
I will definitely be experimenting with this though!
