Smokey Black-Eyed Peas and Greens

What you need: 

1 tablespoon vegetable oil
1/4 onion, diced
2-3 cloves garlic, minced
1 (15 ounce) can black-eyed peas or 1 cup dried black eyed peas, cooked
1 bunch collard greens or kale, chopped
2 teaspoons liquid smoke
hot sauce, to taste, optional

What you do: 

1. In a saute pan, heat vegetable oil Add onion and garlic and fry lightly in oil until translucent.
2. Add beans and collards. Sprinkle on liquid smoke and hot sauce.
3. Cook until greens are tender, about 5 minutes.
Serve with rice and/or biscuits.
Source of recipe: My friend at work told me that this is a great way to cook black-eyed peas. I love black eyed peas and this recipe is great.

I have made this dish 5-6 times now and I just love it. Whenever I get a craving for something just smokey, savory, and stick to your ribs- this is the dish I go for. What a deliiiiiiiiicious recipe to use up collard greens to mmm...
