Skillet Tomato & Barley Soup

What you need: 

1/2 cup barley
1 cup water
1/2 white onion
2 celery stalks
1 tablespoon fresh basil (less if dried)
1 can condensed tomato soup + 1/2 can water
1/2 teaspoon cumin
1/2 teaspoon curry powder
2 teaspoons garlic powder
vegetable oil to saute in

What you do: 

Put barley and water in small pan, cook as you would rice.
While that's cooking, saute onions and celery until they're tender. Add the basil and cook a little while longer. Then stir in the soup & water, spices, and barley. Simmer until everything is well mixed, and it has thickened up a little.
Source of recipe: My kitchen cabinets were a little bare, and this was the result.

SO HOW'D IT GO?

Definitely more of a stew than a soup. Pretty mildly spiced.
