Simply Sauteed Kale with Rice

What you need: 

1 bunch kale (6 to 8 cups chopped)
3 cloves garlic
1 tablespoon olive oil
Pinch salt (or to taste)
Pinch pepper (or to taste)
White or brown rice (how ever much you want to prepare)
Vegetable broth

What you do: 

1) Prepare the rice: I always cook the rice in half water half vegetable broth using a rice cooker. This takes about 20 minutes and I always cook the rice ahead of the kale so that I can plate it together while the kale is still hot.
2) Roughly chop kale and garlic. Coat a pan in olive oil and saute garlic for a minute. Add kale and saute for four minutes, or until the edges of the kale are a little crispy. Make sure the garlic doesn't burn.
3) Once the kale and rice are finished cooking, toss them together and add a little salt and pepper, toss and serve :)
*if you are using brown rice, it might need to cook a little longer than white rice.

SO HOW'D IT GO?

i guess the part about the rice didn't show up.

i cook the rice in half water half veg stock and i cook it in a rice cooker. i start cooking it 15 minutes before the kale so that it can serve the kale on top of it while it's still nice and hot!
