Simple Stir-Fry Carrots

What you need: 

olive oil, as needed
2-3 garlic gloves, chopped
1-3 teaspoons fresh grated ginger
2-3 large carrots, sliced to discs
1/2 teaspoon cardamom powder

What you do: 

1. Heat a little olive oil in a frying pan over medium-high heat. When hot, toss in the garlic and ginger. Stir for a bit.
2. Stir in the carrots and cardamom, making sure that there is an even coating. You may want to add a splash of water to make this easier.
3. Stir occasionally and cook until desired tenderness. Put on plate. Eat.

SO HOW'D IT GO?

I used about 1/4 tsp. cinnamon instead of cardamom and sesame oil instead of olive oil. I also added about a teaspoon of molasses. Pretty tasty  ;)b

I'm always buying more carrots than I can use, so this recipe will come in handy!

i quite liked this (and i'm a huge ginger hater).  ;)
nice way to fix carrots.

oh, and i added a teaspoon of sugar to caramelize everything.
