Simple Mujadera (Lentils and Rice)

What you need: 

1 cup green lentils
1 cup rice (brown or white)
4 1/2-5 cups water
1 large onion, sliced thinly
olive oil, for frying

What you do: 

1. Put the rice, lentils and water in a pot or rice cooker.
2. If using a rice cooker, turn it on and leave. You can let it cook while you are at work, and come home to it and it'll be ready! If using a pot, bring to a boil then lower to a simmer for an hour.
3. Just before you want to eat, fry onion in olive oil over medium heat until they are brown and tasty. Mix together with the Mujadera.
There are endless variations to this tasty, healthy, cheap and easy meal! Serve steamed or sauteed veggies on top, try different spices on it, use hot sauce, put olive oil and ume plum vinegar on it.
Source of recipe: I wrote this recipe from multiple years of eating in amazing little Lebanese and Jordanian diners in Michigan, while growing up!

Totally agree with jen-helen.  With the addition of some seasoning, this came out great!

This is a lovely recipe! It's super easy to make, filling, and delicious. However, in my opinion, it does require some seasonings so as not to taste bland. I always add garlic powder, salt, cumin, freshly ground black pepper, and some parsley.  :>
