Simple Kiwi Sauce [for waffles]
3 tablespoons vegan margarine (I use Earth Balance Buttery Spread)
1-1/2 tablespoons vegan sugar (non bone-char filtered)
3 kiwi fruit, minced
splash nondairy milk
1. In a small pot over MEDIUM HEAT!!! (like a knob before medium), melt butter. Add sugar and nondairy milk. (Add more sugar if you'd like a sweeter sauce, but the kiwi will add more, so don't over do it.)
2. Kiwi Fruit: Dice your kiwi as fine as possible. If you have a food processor, this will save SO much time (bless their blades~) Add just a SPLASH of your "milk". I use almond milk (I think it gives the dish more character and depth than soy).
3. Add kiwi to the pot and let it do its thing. Let the sauce cook down until the Kiwi is VERY tender and the sauce begins to take on a more green colour.
4. Now it is up to you whether you want to keep the pleasant lump of the sweet kiwi presents in each bite, or make it into a smooth puree.
Ladle this sucka all OVER you waffles, tastes best with hemp waffles. Bon!!
