Sick Day Soup

What you need: 

1 Knorr veggie bouillon cube
2 cups water
2 carrots
2 big green onions (w/ white parts too) chopped
7 large cloves of garlic
2 tablespoons veggie butter
3/4 cup rice
small pieces of dried hot red pepper
black pepper, paprika

What you do: 

Melt the butter. Halve the pieces of garlic and put them in butter on low setting, covered, for about 5 minutes. They will get soft and start to turn gold.
Chop carrots into small pieces, add to the pot and cover again for 5 minutes. Add onions and hot pepper. When the green onion has started to wilt, add water and bullion cube. Bring to a boil and add rice, cover for 10 minutes.
This is also really good with a large piece of ginger boiled with the rice and then removed before serving.
