Satisfying Anytime Potatoes

What you need: 

1 large russet potato, unpeeled
1-2 tablespoons vegan butter (I use Earth Balance)
2 tablespoons tomato paste
1 teaspoon coriander
1 teaspoon rosemary
1 teaspoon paprika
salt, to taste

What you do: 

1. Start boiling a medium pot of water. Chop potato into about 10 pieces, and when the water boils, throw it in for 15 minutes.
3. Drain the potatoes into a colander, and let them sit for about 3 minutes until you can handle them. Sample to ensure they've cooked enough, then chop into bite sized pieces.
3. Use the same pot, and add the rest of the ingredients and the potatoes. Stir vigorously for about 20 seconds until it's mixed up very well.

SO HOW'D IT GO?

This recipe is mediocer at best. If you have the ingredients on hand then go ahead, otherwise I wouldnt bother.
Serving size is one, if your eating it like a meal like I did/Two or 3 if its a side dish.

beans- I took the photo after eating half of the dish, made with 1 large potato.

Obviously if you are feeding hungry people or have a big appetite, use more potatoes. Honestly though, when I make this my wife and I have a nice sized portion and we throw the rest in a tupperware to snack on. It's satisfying!

That "large" potato had better be very large, to feed 3-4 people, even as a side dish.

How many servings are in the photo? I ask because 1 potato kinda sounds like very little for 3-4 people.
