Salsa Verde

What you need:

2 cups tomatillos, husked and cleaned
2 jalapenos, cut into 1" pieces
1 clove garlic
1/2 cup cilantro
1 lime
Salt and pepper, to taste

What you do:

1. In a cast iron pan roast the tomatillos and jalapenos on high heat until the tomatillos are charred and a little mushy, about 10 minutes. Depending on the size of your pan you might need to do this in two batches.
2. Once the tomatillos and jalapenos are have been roasted add them with the rest of the ingredients to the blender and blend to desired consistency. If you do not like it too spicy add the pieces of jalapeno one at a time and taste as you go. Serve with chips or on top of your favorite Mexican food and enjoy!!!!
