Salsa de Colores

What you need: 

2 fresh jalapeño peppers, seeded and deveined, finely minced
1 large tomato, diced
1 large handful cilantro, chopped
1/2 medium onion, diced
1-2 cloves garlic, finely minced
1 yellow pepper, diced
1 orange pepper, diced (optional)
juice from one lime
dash of salt
kernels from one ear cooked corn (optional)

What you do: 

Combine all vegetables in a non-reactive bowl. Season to taste with salt and lime juice. Allow to sit, chilling for about an hour before serving.
Serve with chips or on your favorite Mexican food.
This salsa is not only delicious, with the traditional combination of cilantro and peppers and tomato, but its gorgeous. The combination of yellow, green, and red is beautiful, and you can add orange peppers if you like for an even prettier salsa.
