What you need: 

about 2 tablespoons of olive oil (give or take)
one roma tomato
handful of chopped mushrooms
a few cloves of CHOPPED garlic (to personal taste)
about a quarter of a chopped red onion
a splash of water
salt and pepper
half a chopped capsicum

What you do: 

In a small saucepan, heat the olive oil. Add chopped onion and garlic, and saute.
Add the rest of ingredients, put lid on and let simmer. add the water if needed.
This is great on grilled pane de casa or any Italian sourdough bread. Can also be used through pasta or, if your partner isn't veg, on crumbed steak. This is one of those easy tasty things you can make from anything in your fridge. enjoy.
