Roasted Green Chili Lentils
1/2 cup uncooked lentils
1/2 small white onion
3 cloves garlic
1 Anaheim chili
Salt and pepper, to taste
Cooking oil
1) Soak green chili for about 5 minutes in water. Preheat oven to 350 degrees Fahrenheit. Place chili in oven and roast until skin separates from the chili. Once it is finished, place in a plastic bag to steam for about 10 minutes. Peal skin and remove seeds. Dice and put aside.
2) While Chili is roasting, put lentils in water and boil until cooked but still firm. Drain and place aside.
3) Dice onion and garlic. Heat oil in skillet. Add onion, garlic, and chili. Cook until onion is almost clear and cooked through. Add lentils, salt and pepper. Stir until lentils everything is well mixed and lentils are heated again.
Can be served alone or over rice. I serve this over tomato vinaigrette brown rice. Recipe can be found in brown rice.

I loved this recipe! It has simple ingredients and the taste was so good! I used red onion instead of white, since I had it on hand. The lentils really absorbed the taste of the green chili and red onion for a sweet, nutty taste. I ate it in a tortilla and also over vegan mashed potatoes. Yummy!
