Rice Briyani

What you need: 

1 cup rice - I use a brown/wild/red rice mixture.
2 1/2 - 3 cups broth (depends on the kind of rice and how many you use) I use noChickn broth
corn - fresh off the cob is best
1 small potato
1 tomato
1 large carrot
2 - 3 tablespoons Briyani seasoning. I buy mine from a box in an Asian food market.
1 tablespoon oil
optional: grind a tofurkey sausage in a food processor along with pistachios and cashews

What you do: 

Combine all the ingredients, including the ground 'sausage' in a pot or in a rice steamer. Add the broth, bring to a boil, cover, then set on a medium heat until cooked. About 40 - 50 mins for brown rice, 20 - 30 for white rice.
This is awesome with a soy yogurt sauce and with a little chopped mint, dill, and garlic added.
