Red Pepper Pesto
What you need:
1 (12 ounce) jar roasted red peppers
3 tablespoons olive oil
1/2 teaspoon balsamic vinegar
3 tablespoons nutritional yeast flakes
3 garlic cloves
3 tablespoons almond meal
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup fresh basil, chopped or 1 tablespoon dried
What you do:
1. Put your peppers in a food processor.
2. Add the other ingredients (except basil) slowly, while running the machine.
3. Put in bowl and stir in chopped basil.
Source of recipe: I was playing around in the kitchen, and this is what I came up with.

Yea no problem... added a bunch of stuff to add more of my own tastes too it (spicey)
and man... I'm making a double recipe tonight with 2 boxes of spaghetti for movie night... long live pesto!!!
I'm gonna have to get my chili recipe on here... I have friends that have stopped making their own chili because of me :-[ :)
Turned out to be the best pasta sauce I've made!!!

anything I can use instead of almond meal... in smal rural areas it's hard to come by...
just grind up almonds and you got yourself almond meal... simple i use my magic bullet to make flax seeds into flax meal all the time

honestly I dont even know what almond meal is :P
But just using a little over 3 tablespoons almond halves worked great!
Honestly one of my new favorite recipes... quick and easy...

Holy moses I'm glad I found this recipe... I made some huge changes the first and only time I've made it but smokes alive this is great.... my picture is above and is the one on a white plate over spaghetti...
I also added to the recipe. More black pepper, red pepper flakes (for heat) cayenne powder, onion powder (just a dash) handful of spinach, also instead of almond meal I just put in crushed almonds... basically full almonds, into the processor. Then added oregano to the processor as well.... oh and the basil I put in was part fresh, part dried... and I put that into the processor as well instead of after....
