Raw Veggie Soup

What you need: 

3 scallions or 1/2 small red onion, washed and roughly chopped
3 cloves garlic, peeled, washed and roughly chopped
2 cups raw, washed collard, kale, or chard greens, washed and roughly chopped
2 carrots, washed and roughly chopped
2 celery stalks, washed and roughly chopped
1/2 small apple, seeded, washed and roughly chopped
2 inches ginger root, peeled and roughly chopped
1 cup water
1 tablespoon raw agave nectar
1 tablespoon apple cider vinegar
1 tablespoon nutritional yeast (optional)
1 tablespoon tamari (optional)
1 teaspoon cayenne pepper
sea salt, to taste
pepper, to taste

What you do: 

1. Wash and roughly chop all vegetables. Place in high-speed blender (Vitamix or HP Champ 3). Add water, agave, apple cider vinegar, nutritional yeast, tamari, and cayenne pepper.
2. Blend on high speed, adding water as needed until fully pureed. Season as needed with sea salt or pepper.
3. Serve and eat immediately to retain the nutritive value.
