Raw Tahini Pad Thai

What you need: 

1 small or medium zucchini
sprinkle salt
1 large carrot
3 teaspoons raw tahini or almond butter
1 teaspoon vinegar (any kind except balsamic)
1 thumb sized piece ginger, chopped
1 clove garlic, chopped
3/4 teaspoon cayenne (or chili powder)
1 teaspoon soy sauce or nama shoyu
1 teaspoon dark miso
1-3 teaspoons water (depends on preference for thickness)
handful broccoli, chopped small
2 pinches cilantro
mung bean or other sprouts, to serve

What you do: 

1. Using a vegetable peeler (or spiralizer if you desire), peel the zucchini over and over until it's almost all peeled into strips, as much as you can. Chop up any leftover zucchini that you cannot peel into strips.
2. Sprinkle salt over this and set aside. The salt softens the zucchini. Repeat with the carrot but do not add salt. For sauce, add next 7 ingredients to blender (up to water).
3. You may have to scrape down the sides of your container to assist with blending. Add water, as desired, until you reach a consistency that you desire.
4. Squeeze the zucchini in your hands over a sink to drain the water. Place in bowl with carrots, add broccoli and toss. Pour sauce over these veggies. Top with sprouts and cilantro!
Enjoy! I love pad thai and peanut noodles! I just kind of put the same things I would in a pad Thai sauce, but without cooking. It came out great! It's definitely my new favorite raw meal!

SO HOW'D IT GO?

Loved this recipe followed the directions exactly except adding some basil to the dish. I salted the zucchini and left it in the strainer rinsed the salt and squeezed it, I had no watery issues turned out great and stored really well too.

OMG! This was absolutely delicious! Only thing I did a little differently was I salted my bean sprouts, green onion, and my zucchini, then rinsed them.

I will be making this again in not too long.

This was really good! The only reason I gave it 4 instead of 5 stars is because it was kind of a pain to get the sauce out of the blender.  It was sticking to the bottom!

This was wonderful! I used all the ingredients you recommended but doubled it and used two yellow squash and one zucchini as noodles. My boyfriend and I realllyyyy enjoyed it. Thank you so much!

OMG Love it!  Eating it as we speak.  Used Rice Vinegar, Tamari, a combo of ground sunflower and tahini, ginger and garlic, chili pepper and lime juice instead of the water.  Added edamame and bok choy.....could easily eat it every day! :)>>> Thank You!

I left out the vinegar and Miso, but other than that followed the recipe. It was amazingly delicious! My omnivorous hubby said he'd go raw for this recipe! haha We've had it twice in one week now.  I highly recommend!

Yeeeah! I made this again last night.  Not adding water.  Definitely better!  Very good dish... I expect I'll be frequenting this recipe :)
