Raw Green Soup
2 cups pure hot but not boiling water. or use veggie stock
1 veggie bullion cube
1/4 cup nutritional flake yeast
1/3 cup tahini
1 cup coarsely chopped greens, any kind
kelp powder or dulse flakes
cayenne pepper
1/2 ripe avocado for added richness, optional but good
Use a vita-mix or blender to blend water, bullion cube, yeast, tahini and seasonings. When smooth, add greens and avocado if using and blend again till smooth. Serve immediately. This soup can be varied.
Endlessly experiment with different greens and seasonings. We like kale a lot. with the tahini makes for a very calcium rich meal. We have also tried and liked broccoli, leeks, butternut squash, sweet potato, mushrooms, every green you can imagine including wild ones, etc. The tahini gives the texture and flavor of a cream soup but with no dairy! Enjoy and live long.
