Raw Choco Chip cookies

What you need: 

Dough:
1 cup cashew flour (grind raw cashews in coffe grinder)
1/2 cup whole oat groats (grind in coffee grinder)
2 tablespoons agave nectar
2-3 tablespoons coconut oil Coco chunks:
1/2 cup or more of vegan cocoa/carob chips (optional) What I do though:
1/4 cup coconut oil melted
4 tablespoons cocao powder
1-2 tablespoons of agave (depends on preference for sweetness)

What you do: 

Mix the chocolate chips mix together and freeze in a pan. Do it quickly to avoid the coconut oil getting hard again. When you take it out after about 15 minutes (depending on thickness), break into tiny chunks.
Mix all of the dough ingredients together. (Use your hands, it's easiest).
Now fold in the chocolate chip chunks.
Form into cookie shapes and place in dehydrator for 15- 20 minutes to get warm and hold shape. OR you can put in the refrigerator and eat them cold.
Be sure to store these in the fridge though.

SO HOW'D IT GO?

Very tasty! However I had issues turning these things easily into cookies. First I used buckwheat instead of oat groats. Maybe that's what caused the issue. I had to use 3x as much buckwheat to get the dough to be less soupy. Had to keep the homemade chocolate chips frozen in order to break them into pieces. Once I had warmed the coconut oil it therefore warmed the dough then melted my chocolate chips. I agree with what the other reviewer said about chocolate melting all over the dehydrator. Caused a huge mess! These cookies found hope in the freezer. Next time ill chill the dough before add the chocolate chips and freeze them a bit to slightly harden them preventing them turning mushy. The dehydrator was not the way to go. But then again maybe the buckwheat sabotaged the whole operation. Will make again! Soooo good and hit my sweet spot!

These are so delicious!  I've made them a few times and everyone seems to love them - especially me!  My hubby who is an eat-anything-atarian things they're fantastic, my veggie/non-veggie/raw/non-raw friends all eat them up happily. 

This time around I made them with buckwheat groats as I've recently discovered I'm gluten sensitive, and they were just as yummy.  You can't go wrong trying these. ;)b

These were super delicious! I also gave some to my omni friends, and they totally dug these cookies, too.

I used the lower end of the suggested agave range for both the dough and chips, and both were great. However, I really don't suggest putting these in the dehydrator--the chips just melted all over the place. They're plenty yummy without warming them up.

I used Scottish Oats instead of oat groats, just for info. Also, I used a coffee grinder for both the cashews and oats--I don't know whether a food processor would get everything fine enough or not. Maybe a blender?

can you use anything besides oat groats??  just wondering cause I'm not sure I am able to find any raw oat groats around here...

Do you need a coffee grinder, or could you use a food processor, to grind the nuts and grouts?

they sound good, and now i know what to do if i run out of chips ever! thanks for the recipe, will try it soon as i get coconut oil
