Raw "Chicken" Sandwich Salad

What you need: 

1/2 cup sunflower seeds, soaked 3 hours
1/2 cup cashews, soaked 3 hours
2" piece cucumber
1 tablespoon chopped onion
1/2 celery stick
1/4 cup pecans pieces
1 teaspoon dill
1/4 teaspoon curry powder
1/2 teaspoon salt
Juice from 1/2 lemon
lots of ground black pepper
1/2 carrot, optional

What you do: 

1. In a food processor bowl fitted with a metal blade, combine all ingredients.
2. Pulse to combine. It should be a finer texture than regular tofu chicken salad.The cucumber and nuts and carrot should release water after it sits.
3. Add to your fave raw bread! Keep in fridge for a week.

SO HOW'D IT GO?

This recipe is awesome! It got me through my raw cleanse and I will continue to make it regularly. I didn't have the seasonings on hand, but I added plenty of Herbamare and it was delicious.

this was really great. i too added garlic tho...cause it makes everything good.

This was so good, I put it in cabbage leaves with some celery and sliced apple and tomato. I also added a half of a serano, extra lemon and a clove of garlic. Super fast and really delicious

This was delicious! I served it over romaine lettuce. Will definitely make it regularly
