Raw Avocado and Cucumber Nori Rolls

What you need: 

2 raw nori sheets
1 avocado
1/2 cucumber, julienned
3/4 cup shredded carrots
Sesame seeds
Wasabi
Rice wine vinegar
Soy sauce or nama shoyu

What you do: 

1) Lay nori flat and brush on vinegar to lightly dampen the sheet--don't use too much though or the sheets will rip.
2) In a food processor, blend the avocado with a bit of soy sauce until smooth.
3) Spread 1/2 of the avocado on the sheet. Layer on 1/2 of cucumber, carrots, and sesame seeds. Fold up two sides and then roll creating a wrap. Repeat with the second sheet and serve with soy sauce.
This is an easy recipe to alt with fresh veggies of your choice! Simple, yummy, Rawlicious!!!

SO HOW'D IT GO?

These were a very quick, delicious, and refreshing summer meal. I only made two slight changes. I  added some tomato that I needed to use up and instead of moistening the nori slightly with the rice vinegar (the tomato took care of that step) I just mixed to taste with the soy sauce for an awesome dipping sauce. Thanks for sharing!

This recipe has all the flavor of a cooked avocado roll. It's great. Making them raw is so much easier.
