Quick Patty Melt

What you need: 

favorite vegan burger
vegan cheese 2 slices
hearty bread (i like rye for this)
vegan margarine

What you do: 

First, cook your favorite veggie burger.
Put a slice of cheese on each piece of bread.
When the burger is done, place it on one side of the bread (on top of a slice of cheese). Put the other slice of cheese on top of your burger and then close it out with bread on top.
Add some margarine to a frying pan and grill slightly on both sides until your cheese melts a bit. Add a tomato slice if you'd like. Just a simple and easy lunch (great with fries or a cup of soup on a cold day)!

SO HOW'D IT GO?

This hit the spot!  I grilled some onions and put in the slice of tomato, baked up some sweet potato fries and ohhh what a meal!

Thanks for reminding of the simple, but wonderful dish...patty melts!
