Quick 'n' Satisfying Salsa, Black Bean and Rice Combo

What you need: 

1 cup brown rice
8 ounces black beans
1 1/4 cups salsa
1 teaspoon dried red pepper flakes
1 1/2 teaspoons chili powder
pepper, to taste

What you do: 

Cook rice according to package directions. Mix in the other ingredients. Heat slowly until heated thoroughly.
This is a terrific easy dinner recipe for autumn or winter, especially.
Source of recipe: My wife has a book called *The Vegetarian 5-Ingredient Gourmet" by Nava Atlas. This recipe is a variation on the "Salsa Grain and Bean Pilaf" recipe in that book.

SO HOW'D IT GO?

Mmmm this was so good. I just ate this. I've needed to up my caloric intake by 500-1000 calories and the mixture of beans and rice is always good. I wanted something a bit different and this fit the bill. I made a few modifications though.

I added nutritional yeast, a little bit of Italian seasoning and instead of crushed red pepper I used some mild taco sauce and an enthusiastic couple of drops of extra spicy canyee pepper sauce. 

I put broccoli sprouts and water cress on top. Man was it good.

I made this last night only I used primavera pasta sauce and I added some lime juice.  My simple go-to meal at the moment.
