Quick, Healthy and Yummy Pasta
What you need:
1/2 cup firm or frozen and thawed tofu (120 mL), cubed
1/2 cup whole grain pasta (or rice) of your choice (120 mL)
1/2 cup your favorite tomato sauce (120 mL)
1 cup sliced mushrooms (240 mL)
1 cup frozen spinach (240 mL)
1 tablespoon Tofutti cream cheese (15 mL)
What you do:
Heat the tofu in a non-stick frying pan to gently brown it.
Add the rest of the ingredients and heat over medium flame until cream cheese has melted and spinach has thawed and cooked. ready to eat!
Variations:
Depending on what kind of tomato sauce you use, this recipe may turn out a little bland, so add some of your favorite seasoning and or/hot sauce.
Add other chopped vegetables (carrots, asparagus, zucchini, whatever); I usually add a bit of whatever I have in the crisper.
