Quick Chicken & Noodle Soup Fake Out

What you need: 

5 vegan chicken flavored bouillon cubes (cubes each make 1 cup broth)
6 ounces eggless noodles
4 ounces soy curls (I used Butler brand) soaked in 3 cups warm water 10 minutes
2 1/2 tablespoons "Chicken Style" seasoning (again Butler)
2 to 3 celery stalks sliced, about 1 cup
3 to 5 carrots sliced, about 1 cup
1/2 bulb fennel sliced
1/2 large sweet onion diced
salt and pepper to taste

What you do: 

1) Boil noodles according to package directions with bouillon cubes added to water. Saute veggies in nonstick pan until soft then set aside. Add a little olive oil to pan and add drained soy curls, sprinkle with Chicken Style seasoning, stir to completely coat and saute til lightly browned and mostly dry. When noodles are done add in veggies and soy curls to pot, simmer on medium/low heat another 5 minutes. Season to taste, probably will not need salt, but I always add a little freshly ground pepper.
Serve with a sprinkle of hot sauce and some warm crusty bread. Mmmmm Mmmmm.
This recipe is super quick and easy, and can be customized with your favorite veggies, or to increase or decrease serving size. I like my soup with more yummies than broth, if you want a brothy soup just add more water and boullion cubes. Enjoy!
