Pumkin Bread

What you need: 

1-1/2 cup sugar
1 cup canned pumpkin
1/2 cup applesauce
1/2 cup water
egg substitute equivalent to 2 eggs
1 2/3 cups flour
1 teaspoon soda
1 teaspoon cinnamon
3/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon nutmeg
1/4 teaspoon cloves (scan't)

What you do: 

Combine first five ingredients in a small bowl and beat well. In a separate bowl, combine remaining ingredients and mix well. Gradually add to pumpkin mixture and beat well.
Use a non-stick 9x 5 loaf pan (or a non-teflon pan *very lightly* sprayed with Canola Oil cooking spray). Pour batter into loaf pan and bake at 350 degrees for 65 to 70 minutes or until toothpick inserted in the middle comes out clean. Cool 10 minutes in the pan before moving to wire rack.

SO HOW'D IT GO?

I tried this recipe and it is very dense.  It also wasn't completely cooked after 70 minutes.  The bottom part is still pretty gooey.  I also approximately doubled the spice amount.

Really tasty! I only used a cup of sugar instead of 1 1/2 and it turned out fine. I also added about a cup of chopped walnuts and sprinkled some brown sugar on the top. mm mm!

However, when I pulled it out of the oven it was nice and puffy but when I had a shower and came back it had sunk and became quite dense. Did I just not cook it long enough? If anyone has any tips that would be great!

It was delicious.  I made it for a potluck at work, and it was a hit!  It was a little dense though, so next time I may change it up some.

Yum!! This was great!
I doubled it and used one can of pumpkin puree (15 ounces) and it came out delicious!!
