Protein Rich Cookies

What you need: 

3/4 cup organic white flour (all purpose)
1/2 cup besan (Indian chick pea/gram flour)
1/4 cup almond meal
1/2 teaspoons baking powder
5-6 organic apricots chopped finely
1/4 cup liquid sweetener (I used 50% fruit juice concentrate & 50% barley malt)
1/4 cup fat of your choice (oil, palm oil, butter substitute, etc.)
1 egg replacer
few drops vanilla extract

What you do: 

Turn on the oven to 350 degrees Fahrenheit.Mix all the dry ingredients in a bowl.Mix all the wet ingredients (sweetener,fat, egg, vanilla) in another bowl.Pour the wet ingredients into the dryand mix to incorporate all. Add choppedapricots and mix. On a baking sheet, drop spoonfuls of thebatter. No need for too much spacebetween as the cookies do not spread a lot.
