Potato Soup

What you need:

1lb of potatoes
1 large onion
1 pint veg stock
1 pint of soy milk
Oil (for frying)
1 bay leaf
4 whole cloves
Salt & Pepper
Parsley (to garnish)

What you do:

Peel and cut the potato into roughly 1cm cubes. Peel the onion, and stick the cloves into it, roughly halfway up it.
Fry onion and potato in the oil, with the bayleaf, for 10 minutes GENTLY, turning and stirring occasionally (its better if you can cover the pan while you're doing this - keeps the taste in), until the potato is just beginning to cook.
Add the stock and the milk, and bring to the boil.
Simmer until the potato is cooked (around 20 minutes), stirring occasionally.
Remove the bay leaf.
Remove the onion.
Liquidise the remaining bits.
Eat and enjoy!!!!

SO HOW'D IT GO?

Cloves are small nail-shaped flower buds that are dried. After you peel the onion you slide the cloves inside of it, between the layers.
