PMS Pie

What you need: 

Peanut Butter Brownie:
1/2 cup peanut butter
1/2 cup brown sugar
2 tablespoons oil
1 1/2 tablespoons flax meal + 4 tablespoons water
1/2 teaspoon vanilla
1/2 cup nondairy milk (I use soy)
3/4 cup flour
1/2 cup cocoa
1/2 teaspoon baking powder

1 9"vegan graham cracker crust Cookie Dough:
3/4 cup brown sugar
1/4 cup vegan margarine
4 tablespoons nondairy milk
1 teaspoon vanilla
1 cup flour
1/2 cup vegan mini chocolate chips, optional Mousse:
1/2 pound extra firm silken tofu (about 1 cup)
1/3 cup sugar
2 1/2 tablespoons cocoa
1/2 teaspoon vanilla

What you do: 

1. Preheat oven to 350 degrees Fahrenheit. Mix flax seed and water, and let stand a few minutes until gummy. For brownie, combine peanut butter, brown sugar, oil, vanilla, milk and flax mixture. Add dry ingredients to peanut butter mixture and mix until combined; batter will be thick.
2. Scrape peanut butter mixture into graham cracker crust. Bake in preheated oven for 26 to 30 minutes or until toothpick comes out relatively clean. Let cool; prepare cookie dough.
3. For cookie dough, cream brown sugar and margarine. Add vanilla and milk, and combine. Add flour and optional chocolate chips and mix well. Spread dough over cooled brownie and refrigerate while you prepare mousse.
4. For mousse, process all mousse ingredients in food processor until smooth, creamy, light and fluffy. Depending on the strength of your processor, this could take a couple of minutes. There should be no traces of tofu at all. Refrigerate for an hour or so then pipe decoratively on pie.

This is soooo yum!
I made it for my food technology assesment exam today, and it is so yums.
I didn't make any major changes to the recipe, however,our local store doesn''t have any silken tofu, so I just used a regular extra firm one. It tastes great, but it was a little gritty. (The family just thought it had coffee in it)
Also, I live in a small town in New Zealand and we don't have graham crackers, so I used animal-free shortbread. Still yum.
It's oh-so-rich and my favourite layer has to be the cookie dough.

To anyone contemplating trying this recipe; DO IT.

Oh my peanut buttery goodness!  I made this while procrastinating for finals and was so worth it!  I used some Newman's Peanut Butter Oreos crushed up instead of a graham cracker crust.  Decadence!  Peanut butter lovers-- Make this now!   

There are Peanut Butter Newman-O's????  :o

Unblondie-- Sorry I didn't see your post until now.  There are PB Newman-o's and they're pretty tasty!  They come in a smaller package than his other O's, but worth it!  Hope you find them where you live!

Hm. Since it's for the cookie dough, I think it would work..you might have to add a little more flour and a pinch more salt, but it should work.

I have everything for this EXCEPT margarine. Can I use anything else? I have no shortening either, just oil :/ but that wouldn't work as a replacement in a pie, right?

I can't figure out why some people didn't have any luck with this recipe.  We followed it exactly and it came out great.  It is definitely the RICHEST pie on the planet, but it's so good.  We ate it for breakfast like 3 days in a row lol.  I think next time we'll put more peanut butter in, maybe make a layer of peanut butter mouse, cause I didn't really taste peanut butter, just chocolate.  Smother this in vegan whipped cream and drink with a glass of soy milk, it's great!

I made this tonight and the mousse came out not like mousse at all. I followed the recipe exactly, so I'm not sure what could have gone wrong. It came out very watery though, with no body or "fluff" whatsoever.
It's an awesome idea for a pie, it just didn't turn out nearly as good as it sounds.

I'm sorry yours came out bad.  Using extra firm tofu and the listed ingredients for the mousse I cannot imagine why it would have turned out watery.

I followed this recipe exactly but somehow this pie, that looked like a work of art, was a disappointment in the taste and texture department. It was dry and while it didn't taste bad, it didn't really taste like much of anything. I was sad that it turned out this way because I was looking so forward to trying it.
