Pizza Rolls
2 cups flour
5 tablespoons baking powder
1 pinch salt
5 tablespoons vegan butter
2/3 cup nondairy milk
1/4 cup pizza sauce
1/2 to 1 cup shredded vegan mozzarella cheese
1. Preheat oven to 450 degrees Fahrenheit.
2. Dough: In a bowl, combine flour, baking soda, and salt. Add in the vegan butter and crumble with your hands (as you would a crumb topping) until you are able to get little pea-sized lumps. Add in the nondairy milk and mix with a fork until combined. It's okay if there is a little flour left in the bottom of the mixing bowl - you're just going to be turning the dough out on to a floured surface anyways.
3. Pizza Roll Assembly: Flour a flat surface and turn out your dough. Roll into a thin, long-ish rectangle. Spread on your pizza sauce over the dough (not just in the center - across the whole of the surface area). Sprinkle on the vegan cheese and roll. Cut your roll into 12 rounds, discarding the two end pieces leaving your with 10 pizza rolls.
4. Place in a lightly-greased round pan and bake for 12 minutes or until slightly golden. Enjoy!
Source of recipe: I made this up while making biscuits from the VWAV recipe.
SO HOW'D IT GO?
I did everything the recipe says to do and it turned out to be a spicy dough that fell apart. Not sure what happened. Very sad to have lost precious ingredients. :( Anybody have a different experience or maybe an explanation.
Oops, the milk is supposed to be 2/3 of a cup, not 1/4! Sorry :\
