Pineapple Fried Rice

What you need: 

2 cups snake or green beans, cut into 1/2" lengths
1 tablespoon chopped garlic
oil, as needed
2 cups straw mushrooms, halved
1 cup soy protein
1/2 cup ginger, pounded
1 teaspoon pepper
1 teaspoon sugar
1 tablespoon fermented soy bean
1 tablespoon light soy sauce
1 (20 ounce) can diced pineapple
8 cups cooked rice
2 cups onion, diced
2 cups tomato, diced

What you do: 

1. Scald the beans in boiling water and set aside. Fry garlic in oil. When it begins to brown, add mushrooms and soy protein and fry, stirring and turning regularly.
2. Add ginger, fermented soybean, light soy sauce, vegan sugar and pepper.
3. Add pineapple and then rice, onion, and tomato, stirring and turning to mix well. Add the beans, mix in well, remove from heat and serve.'

I LOVED IT!
Next time I'm using twice the amount of pineapple. I also added carrots and it came out fantastic.

i used leftover rice with carrots, but it was still good. and i'm not really a ginger person..

did you omit the ginger?
