Perfect Oatmeal

What you need: 

2 cups soy milk (I just use plain), plus more
2 (semi-scant) cups organic rolled oats
1 1/2 tablespoons organic brown sugar
several good sprinklings of cinnamon
pinch salt, optional
2 handfuls pecans, roughly broken with hands

What you do: 

1. Pour soy milk into small sauce pan, and turn heat to high (our stove heats very quickly). Wait for a couple of minutes until soy milk begins to steam, and bubbles are almost starting to form. Turn heat to low.
2. Add oats, and stir. Allow oatmeal to cook on low for about 5 minutes, or until most soy milk is cooked out, and oats are cooked.
3. Turn off heat, and remove from burner. Add a few splashes of soy milk (1/4 cup, depends on how much liquid you want), brown sugar, cinnamon, salt, and pecans (I keep mine in the freezer).

SO HOW'D IT GO?

Looking at your newest pic (really all of them) made me WISH I ate oatmeal for breakfast today!  I've been lazy and haven't made it in awhile, but you've inspired me to go back  :)

I also use maple syrup sometimes...instead of the brown sugar, and it tastes exactly the same! I've been changing it up a lot lately...adding fruits and such, but I always stick to this basic recipe!  ;)
