Pear Cranberry Crisp

What you need: 

8 pears (I like organic dAnjou), peeled, cored, and sliced
3/4 cup cranberries (I like organic), whole
1 tablespoon lemon juice
1 tablespoon all purpose flour
2 tablespoon liquid sweetener (like maple syrup, brown rice syrup, corn syrup)
pinch salt
1/2 cup all purpose flour
1/2 cup oats (old fashioned)
1/2 cup walnut pieces
1/3 cup margarine
1/2 cup packed brown sugar
pinch of salt

What you do: 

Preheat oven to 375F, lightly grease an 8x8 inch baking dish. In a large bowl mix the pears and cranberries with the lemon juice, 1 tablespoon of flour, sweetener, and salt. Mix just enough to coat evenly. In another bowl mix 1/2 cup flour, oats, walnuts, vegan brown sugar, vegan margarine, and salt until it resembles crumbs. I use my hands. Put the fruit in an even layer in the pan and sprinkle the topping over it. Bake until browned and crisp on top and bubbly on the edges.

SO HOW'D IT GO?

Mmmmmmmm,so good. This topping is great.  I used orange juice instead of lemon.  I came out realy good.  ^-^

This is a great!  I added cinnamon and nutmeg to the fruit mix and cinnamon to the topping.  I used a mix of fruits I had on hand (apples, pears and apricots) and it was delicious. Served warm with vanilla soy ice cream!

The topping for this crisp was excellent.  Although, I used pears that weren't quite ripe and they came out a bit too hard.  I'll try the topping with other types of fruit.
