Pasta Yummy

What you need: 

1 can of Italian spiced diced tomatoes
1 small can tomato paste
1 white onion chopped
2 cloves of garlic minced
2 tablespoon of sunflower oil more or less depends on pan used
1 box whole wheat penne pasta
1 container of extra firm tofu, cut into bite size pieces
one teaspoon or shake shake of crushed red peppers
top off with vegan cheese of your choice

What you do: 

1) Cook paste as recommended...while waiting for water to boil and pasta cooking proceed to step two.
2) Add oil to pan and add onion and garlic , cook till onion is soft and garlic is smelling wonderful.
3) Add tofu and brown and then add diced tomatoes and paste. Stir well cover and let simmer for 10- 15 minutes
4) When pasta is done then your sauce with tofu is ready, place a scoop of pasta on plate and but sauce on top and top with vegan cheese....
5) Enjoy, reheats wonderfully
