Oven Roasted Veggies

What you need: 

1 medium potato, chopped
2 carrots, chopped
1/2 cup broccoli, chopped
1/2 large portobello mushroom, chopped
2 tablespoons vegan butter
2 teaspoons fresh ginger, minced
2 tablespoons ground flax
6 cloves
dash crushed red pepper
2 teaspoons rosemary
2 teaspoons oregano
1 clove garlic, minced
1/4 cup onion, chopped
1/4 cup nondairy milk (I use rice)
salt and pepper, to taste

What you do: 

1. Preheat oven to 400 degrees F. Put chopped veggies on a large piece of aluminum foil. Form the aluminum foil into a bowl for the veggies.
2. In a small saucepan, melt butter and saute ginger, flax, cloves, red pepper, rosemary, oregano, garlic and onion for a couple of minutes.
3. Add milk and saute for another few minutes. Salt and pepper, to taste.
4. Pour mixture over veggies and close aluminum foil around them. Bake for 1 hour.
