Oven Fried Mashed Potato Breakfast

What you need: 

6 medium potatoes
4 mini onion (or 1 large, I just happened to buy these mini things this week!)
4-6 tablespoons oil (yes this is not good for you... I know, I know!!)
1/8 cup vinegar
2 tablespoons Sucanat
1 can black beans
2 tablespoons nutritional yeast, sprinkled on top of each plate

What you do: 

Okay, here is what I did :)
First I microwaved all the potatoes after poking holes in them. It took my microwave about 8 minutes for the 6 medium potatoes together.
While that is nuking I diced the onion and placed it in a Pyrex glass dish with about 1 tablespoon oil, the vinegar and Sucanat, and plopped it in the oven. (which was set to about 375) I cooked these separately to get them good and caramelized although if you don’t care, just add them to the potatoes in a minute.
Ok potatoes are soft so I place them on a cutting board and smashed them with a potato masher, skins and all (skins are yummy!)
Prepared a new larger baking glass dish and doted it with oil so there was a thin layer all over, this took about 3 tablespoon Placed the mashed up potatoes on top sprinkled with salt and pepper and plopped in the oven stirring the onions while I was at it.
Cooked for about 10 minutes, took onions out and flipped the tatters. adding some more oil for the other side since they really soak it up.
About another 10 minutes and then took them out. Flipped them over loosening them from the pan, more salt to taste.
Open can of beans, drain and rinse. add on top and stir in (they soak up any excess oil so its not really THAT greasy!)
Sprinkle nutritional yeast on top of each serving and serve with ketchup! Yum!
(vegan ketchup = 1 can tomato paste, 1/4 cup maple syrup, 1/4 cup apple cider vinegar, garlic powder and salt, add water to thin to desired thickness, viola.)
