Oil Free 'Diet' Microwave Chocolate Cake

What you need: 

4 tablespoons flour
5 teaspoons sugar
1/2 teaspoon baking powder
2 1/2-3 tablespoons unsweetened cocoa powder
3-4 tablespoons unsweetened nondairy milk
1 teaspoon vanilla extract

What you do: 

1. Mix dry ingredients in a fairly large mug.
2. Stir nondairy milk and vanilla into dry ingredients.
3. Mix until it's a thick texture. Microwave for about 1 minute.
I top mine with berries, and enjoy with some almond milk.
Source of recipe: I was searching the web for a good 'chocolate mug' recipe, and i saw way too many with unnecessary ingredients. This is a delicious, fairly large substitute.

SO HOW'D IT GO?

I felt compelled to review this (twice this week! lol) because I made it this evening for a friend's impromptu birthday cake with a variation. I made one chocolate cake, but used up the rest of my cocoa powder. :( For the second "cup"cake, I replaced the cocoa powder with an equal amount of mashed fresh strawberries, and increased the amount of flour to about 6-1/2 tablespoons to balance out the extra liquid from the strawberries. Left the rest of the ingredients as stated in the original recipe, but increased the cooking time to 1:45. Oh man, that cake was so crazy good!  :>

This was pretty good. I didn't have vanilla extract, so I subbed rosewater instead. Tasty and easy!

This was so yummy and just what I needed for a quick chocolate fix.  I added some vegan chocolate ships to the batter before I microwaved it for even more chocolate!
