Oatmeal Breakfast Bars

What you need: 

2 2/3 cups oats
1/3 cup flax seed meal
1/2 cup dried fruit
2/3 cup chopped nuts (I use pecans)
1/2 tablespoons cinnamon
2 medium bananas, mashed
1 liquid egg replacer (I use Ener G)
1/3 cup canola oil
1-2 tablespoons agave nectar

What you do: 

1. Preheat oven to 350 degrees F. Grease a cookie sheet. Combine all the dry ingredients and mix well.
2. Add mashed bananas, prepared egg replacer, oil and sweetener and mix well until blended and mixture is sticky. Add water, as needed for a sticky consistency.
3. Shape dough into bars on prepared cookie sheet, making the bars about 1/3" thick. I would definitely recommend shaping all the bars at one time, because the longer the dough sits, the stickier it gets.
4. Bake for 15 minutes.
I make these for my husband in lieu of buying him store bought breakfast bars. They are healthier and cheaper.

SO HOW'D IT GO?

I made these a while ago, and they were good right after I made them, but after sitting for a bit they turned soggy.  I have no idea what happened...  Maybe I just didn't cook them long enough...?

Dunno Azila, I kind of like the sogginess, as it makes the oats easier to bear I think!  I'd rather have them soggy than chewy, if you get what I mean!  Good luck though!

Made these today, pretty good! Made a few adjustments: jumbo oats (not an adjustment as such..), jam for egg replacer (about a tbsp), little more fruit, oat bran = flax & baked for slightly longer.

I just made these, with a mix of rolled oats and crunchy meusli, and just a bit of sweetener.  Along with a few other posters, I first baked the mixture in a little square pan for 15 minutes, and then cut them into bars and baked them for a further 5 minutes.  As they were cooling, I spread a chocolate spread over one side of them, and set them in the fridge to cool.  They came out great! wow, i LOVE making homemade bars and these were very good!  i used 3 tbsp ground flax and 3 tbsp wheat germ instead of 1/3 cup flax meal, applesauce for oil, 1/3 cup chopped almonds and 1/3 cup sunflower seeds, 1/4 cup dried apricots and 1/4 cup prunes...even my sister raved about them, and she is hesitant with some of my dishes.  thanks!

This recipe is awesome. The only part I didn't like was getting messy forming the bars, so I used a bamboo sushi mat lined with saran wrap. Put a scoop of the mix in it and just fold over once and flatten. Makes perfect bars!

I was looking to make a high energy snack to take for my dance company's 10 hr long dress rehearsal.  This recipe seemed perfect! I halved the recipe and decided to substitute applesauce for the egg replacement and oil.  Upon seeing someone had eaten the only banana left I tried adding extra applesauce and a bit more molasses.  End result: the taste was delicious and was a nice pair with tea, but it definitely lacked the combining powers of the banana.  I will certainly give this one another try!

Mine never firmed up either but I'm going to keep trying. I think maybe too much applesauce? not sure.

I made these yesterday using applesauce instead of oil or egg, sugar free maple syrup as the sweetner, and dried apples for the fruit. They're a bit too chewy--probably from the applesauce. I baked them for about 1/2 hour but they never seemed to dry up. Interesting recipe though. I adore the Gnu cinamon raison bars, but at 2 bucks a pop, I'll keep trying.  :-*

Mine are cooking so not sure on taste, although I can't imagine will be anything but yummy. I added all the stuff in pantry in way of dried nuts and fruits, plus coconut and a tiny bit of chocolate chips for that bit o chocolate I crave! I'm excited because I love bars like this but the ones in the store are either full of crap and made to look healthy OR the ones you know really are healthy are ridiculously overpriced. Thanks! You can play around with this for sure!
