Oatmeal with Black Beans, Vegetables and Fruit

What you need: 

3 cups rolled oats
1 (15 ounce) can black beans, drained and rinsed
1 cup raisins
1/2 cup ground flax seeds
2 cups frozen mixed vegetables
2 cups frozen blueberries
1 cup frozen strawberries
1 to 2 cups frozen, sliced bananas
2 cups water

What you do: 

1. In an 3 quart microwavable dish, add first 5 ingredients (through mixed vegetables). Mix well and then pack down flat.
2. Top with frozen fruit, spreading out to create a fruit layer. Pour water over mixture.
3. Leave uncovered and microwave for 9 minutes on high (time is for a ~1000W microwave).
4. Let stand for a few minutes to cool and distribute the heat.
For a more moist consistency, cover dish while it cools. For dryer consistency, leave cover off. In general I don't like things over cooked, so you should find this to have a soft grainy texture. But if you like it mushy, add more water and cook it longer. Eat what you want, cover the rest and put it in the refrigerator for the next days breakfast. I usually eat it cold over the next few days with hot herbal coffee or tea with a some Trader Joe's chocolate soy milk. Sometimes I pack it cold in a container to take with me for breakfast.

SO HOW'D IT GO?

In all honesty, whilst reading the ingrediants for this recipe, I was a little skeptical. But I thought, 'what the heck', and you know what? It's surprisingly good! Seriously :D.
