Nutloaf

What you need: 

1 tablespoon olive oil
1 red onion finely chopped
3 garlic cloves chopped
1 bag baby carrots
4 oz millet
1 teaspoon turmeric
2 teaspoon Italian blend herbs
2 teaspoon miso paste
4.5 oz pecans
2 tablespoon sesame seeds

What you do: 

Steam the carrots until they are soft enough to mash or puree.
Place the pecans on a baking dish and cook at 375 degrees for ten minutes. Once cooked run them through the food processor.
Cook the chopped onion and garlic in the olive oil until soft.
Add the millet to 2 cups of water with the turmeric and herbs. Cook well and once the liquid is absorbed add the miso paste and stir.
Mix the carrots, millet, onions, garlic and pecans. Form in a greased loaf time. Sprinkle with sesame seeds.
Bake for 35 minutes at 375 degrees F.

SO HOW'D IT GO?

Good stuff. I made it with green millet purchased at an Asian foods store, cooked in a rice cooker. Came out great.
