Nectarine Almond Oatmeal

What you need: 

1 cup water
1/2 cup old fashioned oats
pinch salt
1/4 teaspoon almond extract
2 to 4 tablespoons nondairy milk (I use unsweetened almond)
1/2 teaspoon vegan butter (I use Earth Balance)
1 nectarine, chopped
1 tablespoon chopped raw almonds
1/4 to 1/2 teaspoon cinnamon
1/2 to 1 tablespoon brown sugar

What you do: 

1. Bring water to a boil. When boiling, add oats, salt, and almond extract. When water has fully evaporated and oats are cooked, turn burner off.
2. Add nondairy milk and vegan butter, and stir until well combined.
3. Add oat mixture to bowl, and top with nectarine, almonds, cinnamon and brown sugar.
I love this and have used different fruits, nuts, extracts and sweeteners. This is my favorite. My grammy used to make this for us with chopped apple and almond extract.
