Mushroom & Black Bean Rice

What you need: 

1 king mushroom, diced
2 large button mushrooms, diced
3 dried shiitake mushrooms, rehydrated & diced
1 small onion, chopped
3 garlic cloves, chopped
1 tablespoon oil
1 1/2 cups of uncooked brown rice
2 tablespoons veggie bouillon (broth powder)
1 cup black beans (or from a can)

What you do: 

Take out the rice cooker from hiding. Wash the brown rice and add the appropriate amount of water as the manufacturer says (I used 1 cup brown rice = 1 water level plus 1 rice measuring cup of water). Once done leave the rice uncooked to the side and don't start it yet.
Heat a pan at med-high on the stove Add the first 6 ingredients into the pan. Cook the veggies until the onions are transparent. Add the veggie bouillon into the mushroom mixture.
Turn off the stove and add the mushroom mixture and the black beans with the brown rice that's waiting in the rice cooker. Now you can start the rice cooker to cook everything.
Note: If you can't find any king mushrooms (I get them in Chinatown) you can use some other large mushroom species like portabella. Enjoy ^_^

SO HOW'D IT GO?

i love this recipe!  i only had baby portabella mushrooms and i topped it off with some sriracha hot chili sauce and it was amazing! and EASY!
