Mini Pizza Wheels

What you need: 

1 cup soy curls
1 garlic clove, chopped
1/2 cup onion, chopped
1 tablespoon chicken style seasoning (I use Butler Chik-style seasoning)
6 whole wheat english muffins, halved
1 cup pizza sauce or 1/2 jar (10 ounces) spaghetti sauce
1/2 cup black olives, chopped
1 1/2 cups vegan mozzarella shreds (I use Daiya mozzarella)

What you do: 

1. Preheat oven to 380 degrees F. Grease 1 cookie sheet. Soak the soy curls in warm water for about 10 minutes.
2. Drain and squeeze out excess water and chop curls into smaller chunks. Saute with garlic, onion and seasoning until lightly browned.
3. Lay out English muffins on prepared cookie sheet. Layer on the pizza sauce, then all other ingredients in the order of your choice. Have fun with it!
4. Bake for 10-15 minutes. Enjoy!

SO HOW'D IT GO?

Interesting recipe - but I would recommend italian seasoning instead of butler chicken spices or whatever that was.

Very simple to make - just take a pita or wrap and put some sauce and shredded cheese and toppings and toast or bake in an oven for 2-3 mins until cheese is melted.
