Mince Pies

What you need:

200g (7 oz) dried fruit
50g (2 oz) candied fruit
1 apple
100g Earth Balance (3.5 oz)
50 g brown sugar (2 oz)
25 g hazelnuts
rind of 2 oranges
rind of 1 lemon
2 teaspoons ginger
2 teaspoons Brandy
350g flour
1 pinch of salt
150g Earth Balance
1 egg substitute
1 tablespoon cold water

What you do:

Finely chop first 10 ingredients and cook in the oven at 215 Fahrenheit for 3 hours. Stir it a whole bunch.
To make the pastry, I like to use a food processor. Combine Flour, a pinch of salt and the rest of the ingredients. Pulse it until it just forms a loose dough.
Put dough into refrigerator for a little bit.
When all the ingredients for the pies has cooled roll out dough. You can either make one big one or 12 little ones. Use glasses to cut out the circles making sure that 6 of the circles are larger than the other six.
Put a bit of the filling in the center of the larger ones then put the little bits on top press the sides together.
In an oven preheated to 350 bake the pies for 25 minutes or till golden. I have been wanting to veganize mince pies for years, and I finally managed to do quite a nice one.
I hope you all enjoy (and pardon my spelling) Cheers!

I can't believe no one has reviewed this yet. I will even though its my recipe, the crust is flaky and if you've never tried a mince pie, this is a freaking good version, vegan or not!
