Mimi's Tangy Chickpea Sandwhich Spread

What you need: 

1 1/2 cups chickpeas
1 1/2 teaspoons ketchup
1 1/2 teaspoons prepared horseradish
1/2 cup vegan mayonnaise
1 teaspoon sugar
1/2 teaspoon lemon juice

What you do: 

1) Mash chickpeas but leave some texture. I found that a few pulses on the food processor works the best for me.
2) In a second bowl, combine mayonnaise, horseradish and remaining ingredients. Add to chickpea mixture and chill at least one hour, though overnight is best.
This is really good with sprouts in a pita!
