Millet 'n Beet Burgers

What you need:

2 cups water
1 cup millet (dry measure), cooked (will make 2 cups cooked)
1/2 teaspoon sea salt, plus to taste
2 beets, grated (about 1-1/2 cups)
2 tablespoons fresh mint, chopped
1 tablespoon sesame oil

What you do:

1. Millet: Rinse and drain millet. To a pot, combine water, millet, and 1/2 teaspoon sea salt; bring it to a boil. Boil for 2 minutes, then reduce heat to low and simmer for 20 minutes. Millet is fully cooked when it is dry and fluffy. Do not stir the millet while it is cooking.
2. In a bowl, combine the millet and beets, then add the mint and salt to taste; stir to thoroughly combine.
3. Pour the sesame oil over the mixture, and stir through (you may want to use your hands at this point).
4. Bake or Fry Burgers: a. Bake: Form the mixture into patties and place on a baking tray lined with parchment paper. Bake in a 350 degree F oven for 20 to 25 minutes. b. Fry: Leave the oil out of the mixture and use it for frying instead. Heat a pan, add a teaspoon of oil and lay the patties in the pan. Let them cook for 7 to 10 minutes before flipping and cooking for another 5 minutes or so on the other side.
