Microwave Peanut Brittle

What you need: 

1 cup white sugar
1/2 cup light corn syrup
1 cup peanuts, salted
1 teaspoon vegan, non-hdrogenated margarine or soy butter
1 teaspoon vanilla extract
1 teaspoon baking soda

What you do: 

'Butter' or oil a cookie sheet. Combine sugar and corn syrup in a microwave-safe bowl and microwave on high for 4 minutes. Stir in peanuts and microwave again for 3 1/2 minutes, then stir in margarine and vanilla and microwave for 1 1/2 minutes.
Stir in baking soda until light and foamy. Pour onto cookie sheet and spread thin. Cool completely and break into pieces and serve.

SO HOW'D IT GO?

This was interesting to make! I had a plastic "microwave-safe" bowl melt (full of corn syrup and sugar) ... so be sure to use a glass or ceramic bowl!

Also, the serving size was WAY smaller for me. I mean... I got like... two pieces. But lots of peanuts.

I'm not sure I'd make it again, because of the huge amount of corn syrup and sugar...

But if you love peanut brittle, give it a try!

This was really good  :)>>> and brought back many memories of my childhood. Super easy and yummy, what more could you ask for.

Oh and I did not have peanuts so I used macadamia nuts. Yum!  ;D
