Mexican Black-Eyed Peas (EASY!)

What you need: 

1 can (14 oz-small one) of Blackeyed Peas
1 can (14 oz-small one) of Mexican Flavored stewed tomatoes. I prefer the S&W brand, but
any will work.

What you do: 

Okay everyone. Get ready for EASY! Drain the blackeyed peas. Put in a saucepan. Drain the tomato juice into the saucepan, then cut up the tomatoes to be smaller sized. Add the tomatoes to the saucepan. Mix together. Turn the heat on to medium and simmer for 25-30 minutes. Youre done!
You can eat it plain, but our family favorite is to serve over cooked rice, make up some vegan cornbread muffins and serve a salad on the side. I have three kids (ages 9,6,3) who love it. We double the recipe and enjoy leftovers! Good and very inexpensive.

SO HOW'D IT GO?

i added a veggie bouillon cube and served it over quinoa. it was real flavorful, and i will make it again.

This has been one of my favorite recipes! I'm in college and have 4 roommates and never have leftovers. I usually double this and add some corn to make the meal as big as I can for all of us. We usually eat it with tortillas, tortilla chips, or rice depending on what we happen to have. Thanks so much for this recipe, it has definately saved me some time and money!

I enjoyed this dish! I'll most likely make this a regular meal since it was quick, tasty and cheap.  8)  I added some garlic cloves and Tapatillo for my palate.

It was nice and easy! Plus tastey! Stupid me forgot to cut the tomatoes but it still worked *chuckles*
