Mango strawberry mint creamsicles

What you need: 

1 cup frozen mango chunks

1 cup frozen strawberries

1 can coconut milk

1/2 cup sugar

1/2 cup water

bunch of mint leaves

What you do: 

(1) Make mint simple syrup: boil water and sugar on stove until all the sugar has disolved.  Remove from heat and add a bunch of mint leaves.  Let steep for about an hour, then pour the liquid into a container, while draining out the mind leaves.  (I usually make a double or triple batch of this mint simple syrup so that I have some on hand to make more popsicles or Mojitos!)

(2) Add the simple syrup along with the rest of the ingredients to a blender and blend until smooth.

(3) Pour into popsicle molds, and freeze for about 4 hours!
